Cherry tomato and Cucumber Omelette

I've been scanning through 100's of recipes online for cooking healthy food and I've come up with a few ideas of my own. Here's a breakfast recipe which is easy to make, fast and also very nutritious.

 You will need:

2 eggs
half a cucumber diced
3 cherry tomatoes cut into medium pieces
a slice of cheese ( any cheese you prefer)
1 tsp salt
1 tsp turmeric powder
1 tsp garlic powder
1 tsp chili powder ( if you want it to be a bit spicy, otherwise you can substitute pepper)
2 tbsp olive oil

Method

First of all cut up the vegetables and put them onto a plate, so dice up the cucumber and tomatoes.

Crack the eggs into a bowl and whip them up until they are smooth

Add the salt, turmeric powder, garlic powder and chili powder into the whipped eggs and continue to whip the eggs. The secret of having a really nice omelette is to whip your eggs thoroughly.

Then add your vegetables into the mixture and stir gently making sure everything gets mixed up nicely.

Put the olive oil into the pan and heat it, add the egg mixture and spread evenly over pan. Cover the pan with a lid and keep on medium heat for about 6 minutes.

Then flip your omelette over for the other side to cook. This may be a bit tricky, but once you have mastered the art of flipping, it'll be a piece of cake. Using a non stick pan would be easier.

Keep for about 3 minutes.

Your omelette is done. Having this omelette with a glass of orange juice is not only a healthy option but it also keeps you full for a longer time.
